Basically melee maps that has small build able bases can favour human race as their towers can fit very small area. Also maps that has short distance between bases favour humans as they can rush with militia. Basically I think humans does not have so good air troops compared to the other races and they also have more strength on melee units than range.

Orcs can be pain in the ass early on as their early units are rather powerful and strong compared to f.e. night elves. Orcs can also defend pretty good thanks to their burrows. On the other hand orcs can also poke enemies easily with Blademaster or with Farseer with the summons. Also orcs are really powerful clearing early creepcamps with their Farseer and Shadowhunter because of their protective/summon tanking abilities. (Human Paladin and Archmage can do this as well but not as effectively). However destroying an orc base in late game can be tough too as it's most likely filled up with burrows and towers and some troops.

Night elves are really vulnerable early on if you manage to stop them using their Moon wells effectively. Night elves relay more on range than strong melee except at late game and this is why it's good for them to have creeps that have flying units in them (Dragons f.e.) as other races focus more on land units. However Night elves can have trouble killing harder creep camps as only their late units are really strong. The most unique lumber harvesting system also prefers night elves on maps that have only little forests in them, or long distance to the edge of the forest, or when forests cover up sides of the base. On the other hand this can be negative for night elves as well, as they won't get more building area by harvesting lumber. Worth to mention that if the early creeps are very weak night elves have no trouble clearing them with just bare hero as it can be healed back at moon wells. However night elves can protect their base maybe the best as they can hold enemy troops back amazingly well with help of their moon wells and Ancient Protectors. Night elves can also change their unit types pretty fast: they can mount archers and change huntresses which are their only close-ranged-unit early on to mountain giants and druid of the claws.

Undeads are very heavily protective as they can upgrade their food productive Ziggurats into shooting and slowing turrets and the blights gives them extra regeneration. Not to mention to power to summon skeletons from corpses can be really powerful especially against not so strong armies. Crypt fiends will rape the enemy air units with no chance of losing. Other races have little to say about this. Gargoyles can be very powerful air units as they are very powerful against air units and can be depressive at harassing enemy base and then fleeing back. Undead race however, can have problems leaving far from their base as they lose their regeneration and they can not build anywhere except near goldmines and blighted area. Undead base is mostly filled up with shooting ziggurats and attacking ghouls that block larger units in really nasty way and overall the shooting head building is really annoying. However tactical fighting style can crush undead as their army is strong thanks to their effective but weak range unit brush that they can use and thanks to the healing/mana giving Obsidian Statues and meat wagons. Their frontline, on the other hand is strong.

1.) If you're making a map, be sure to make early creep camps are grounded otherwise putting harpies for example could be a real disadvantage for Undead players since they have to reach Tier 2 to gain Web ability for Crypt Fiends.

2.) This is a very basic yet often mistake for melee map makers. If you're an extremely competitive map, USE Blizzard cliffs; it will be a huge game changer as sight from units below are degraded and gives most upper advantage from units above, this way it makes the map entirely more tactical.

3.) I think Orcs and Night Elves needed lumber the most and among the 4, they're the ones who seem to gather the lumber slowest. For Orcs, they need them to sustain high tier upgrades while Night Elves, even the basic ones need lumber. Just thought worth mentioning that if I were playing either of the races, I would rush for Goblin Shredders.
